Homemade potato bagels with cheese and bacon
Potatoes are a hit in our family. These bagels are quite simple to prepare and are suitable for festive and everyday tables. A convenient way to recycle leftover mashed potatoes from yesterday. The cheeses that make up the bagels add a special flavor.
The potato bagels are finger-licking good, but they are deep-fried, so don’t get too carried away with this dish. And to remove as much oil as possible from the finished bagels, simply blot them thoroughly with napkins.

Ingredients:
boiled potatoes 350 g
butter 2 tbsp. l.
vegetable oil for deep frying 300 ml
wheat flour 150-200 g
parmesan (cheese) 3 tbsp. l.
hard cheese 70 g
smoked bacon 50 g
salt spices to taste

Boil pre-peeled potatoes in salted water. You can also use baked or boiled potatoes in their skins (in their skins); also peel them before cooking. Place the warm potatoes in a deep container and add soft butter to it. If you have ghee, use it.


Using a potato masher, crush the potatoes into a homogeneous mass, preferably without lumps.


Now use a large spoon to stir the potatoes and add the grated Parmesan. This cheese will add flavor and piquancy to potato bagels. Replace it with any other full-fat and aged cheese if Parmesan is not available.


Add wheat flour in portions and knead soft potato dough. Leave the dough covered with plastic wrap in a bowl on the counter.


Cut hard cheese and smoked bacon into thin bars for filling potato bagels.


Dust your work surface with flour and roll out two sheets of potato dough, not too thin.


Cut the dough into sections and place cheese and bacon on the edge of each piece.


Roll the potato cheese bagels and press the ends lightly.


Heat vegetable oil in a ladle and fry the bagels in small portions over medium heat. It only takes 5-7 minutes to prepare deep-fried bagels.
